Gluten Free Chocolate Almond Butter Bars

It's that time of the year, cookie exchanges, sweets, parties, love.
Here is a Gluten Free, Vegan recipe for Chocolate Almond Butter Bars.
They are called bars because they are somewhere in the middle of a brownie and a cookie and they are very tasty.
I made these for Alex's dance class in less than 1/2 hour and for those of you who know me know that I don't bake! 
They turned out great with no explosions in my oven! Wahooo!

2 1/4 cup Gluten Free Mama's All Purpose Baking Mix (Or any other gluten free baking flour mix)
1 tsp Baking Soda
1 tsp Salt

1/2 cup Earth Balance Natural Buttery Spread (melted)
1/2 cup Almond or Peanut Butter
1/2 cup Organic Sugar
1/2 cup Organic Brown Sugar

1 tsp Vanilla
2 Tbs Ground Flax Seed
6 Tbs. Blessed Water

1 cup Vegan Carob Chips

Preheat oven to 375 degrees and slightly grease a 15 1/2 X 10 1/2 inch cookie sheet with sides. (I used a torte pan).

In a small bowl, combine flours, soda, salt.
In a large bowl combine buttery spread, almond butter, and sugars, beat with mixer until creamy.

Add vanilla, ground flax and blessed water, gradually add flour mixture and stop when barely blended and spin beaters to remove dough. Stir in the carob ships in with a sturdy wooden spoon.

Press dough into pan, pushing the dough to the edges so that it is even. Place the pan in pre-heated oven for 8 to 10 minutes. Remove and allow to cool for 5 minutes, then cut into squares or wedges.

Variation:
If you don't have vegan carob chips available, use 1/4 cup Cocoa Powder and a couple of tablespoons of blessed water, mix and follow directions as stated above.
